This is a berry cheese cake I made from scratch and it came out so good. The consistency was thick and creamy and the crust had a nice spice to it. For the crust you will need to add 5 tablespoons of melted butter to 1 cup of graham cracker crumbs with a half tsp of nutmeg, 3 tbsp of brown sugar and one tbsp of cinnamon. Mix together and press into the bottom of a springform pan. Thats it for the crust, For the cake, mix 3 8-oz packs of cream cheese and 1 cup of white sugar. Beat in 1 cup heavy cream and 1 cup sour cream,then add 3 tbsp flour and 1 tbsp pure vanilla extract (not the imitation, real vanilla extract is way better!) then mix in 2 eggs. Pour into the pan. Ok now every oven is different so you may need to adjust times or temps but i cook mine at 340 for 50 min. After 50 min I turn the oven off and crack it oprn but leave the cake inside the oven until its cool enough to pick up with my hands then it goes in the fridge over night. A good friend of mine who is a professional baker shared a trick with me, to keep the cake from cracking while it is cooling put a pan of water in the oven on the lower rack while the cake is baking, and halfway through the baking time run a butter knife around the edge of the cake. This recipe makes a great cheesecake you can top with anything, I chose fruit mixed in a little powdered sugar.
